Chicken & Kiwi Tacos

We made these last week and they are oh so yummy! This is a great summer recipe from Better Homes & Garden Grilling Book.

Chicken & Kiwi Tacos

1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 to 1/4 teaspoon crushed red pepper
8 ounces skinless, boneless chicken breast halves
1 teaspoon cooking oil
6 taco shells - although we used 12!
1 cup shredded romaine
1/2 cup shredded Monterey Jack cheese
3 kiwifruit, peeled & chopped
1 small tomato, chopped
1 tablespoon lime juice or lemon juice

For rub, in small bowl combine cumin, salt, and crushed red pepper. Lightly pound chicken until about 1/2 inch thick. Brush chicken breasts with oil. Sprinkle rub evenly over brushed chicken breasts; rub in with your fingers.


Grill chicken for 12 to 15 minutes or until no longer pink, turning halfway through grilling. Remove chicken & set aside until cool enough to handle.


Cut chicken into thin strips and arrange in taco shells. Top with romaine and cheese. In a small bowl, toss together chopped kiwi, tomato, and lime juice. Sprinkle over tacos.
