Candy Cane Bark

For Christmas treats this year, I really wanted to make a Peppermint Bark.  I had tasted some that my mother-in-law bought at a local candy shop and wanted to try to recreate it.  I don't think I actually recreated it as came up with something a little different, but equally yummy.  As Pinterest as my guide, I ended up combining two recipes together.  The last two batches (out of 6 total) that I made ended up the best!  One of the secret ingredients was Candy Cane Oreos, which I was only able to find at Target.  On my second trip to buy some, I discovered they were almost gone and bought three more packages.  There is still an unopened package left.  Yippee!  My other secret ingredient was a fantastic little helper named Maddy.  She took her job of crushing candy canes with her play hammer very, very seriously!  By the time we made the last batch, all I had to do is ask Maddy to get her hammer and she knew it was time to crush candy canes!  So cute!


Without further ado....

Candy Cane Bark
10 mini candy canes, crushed (about 1/2 cup)
12 Oreos, chopped or crushed (about 1 cup) - I ended up crushing mine and it seemed to work better!
1 cup semi-sweet chocolate chips
1 1/2 cups white chocolate chips
1/2 cup whipping cream (divided)


- Line a cookie sheet with wax paper.

- Add chocolate chips and 1/4 cup whipping cream to microwave safe bowl and heat on 50% power in 30 second increments, stirring after each, until heated and smooth.  Pour onto prepared cookie sheet and spread flat.  Sprinkle with crushed oreos.  (You may want to pat them lightly into the chocolate).  Chill for 15-20 minutes.

- Add white chocolate chips and 1/4 cup whipping cream to microwave safe bowl and heat on 50% power in 30 second increments, stirring after each, until heated and smooth.  Pour over Oreos and spread to the edges of the semi-sweet chocolate.  Sprinkle with chopped candy canes.  Chill until set, cut into pieces, and enjoy!

We had some peppermint bark from Whole Foods this Christmas and it was surprisingly good (I usually don't like peppermint flavored things too much). I am going to print this recipe and give it a try next Christmas!
